Role Overview

The F&B Manager oversees the comprehensive performance of all F&B venues—including restaurants, bars, banquets, room service, and events—driving revenue, controlling costs, and upholding service excellence.

Main Responsibilities:

• Supplier Relationship Management: Build and sustain relationships with F&B suppliers, focusing on premium quality, sustainability, and cost efficiency.
• Procurement Strategy: Design and implement procurement policies aligned with corporate goals.
• Negotiation & Contracting: Secure advantageous agreements with vendors, ensuring compliance with brand and sustainability standards.
• Order Management: Oversee order cycles, align with objectives, and ensure policy adherence.
• Financial Governance: Own departmental budget and forecasts, monitor variances, and deliver on P&L targets.
• Cost Analysis & Improvement: Track food & beverage costs and KPIs, benchmark against budgets and historical data, and drive improvements.
• Operations Oversight: Lead daily operations across all outlets (restaurants, bars, banquets, IRD), ensuring SOP excellence.
• Team Leadership: Recruit, train, and inspire F&B staff, ensuring career growth, performance management, and high engagement.
• Guest Journey: Guarantee exceptional dining experiences, personalized service, and effective service recovery.
• Supplier Research & Engagement: Identify new suppliers and products, negotiate terms, and communicate findings to stakeholders.
• Procurement & Negotiation: Secure advantageous pricing and rebate conditions through skilled negotiation.
• Order Management (Additional): Execute product/service ordering processes in line with managerial requests.
• Market Analysis & Supplier Visits: Keep aware of market trends through regular supplier engagements.
• ERP System Updates: Accurately introduce new products into the ERP system with detailed information.
• Invoice Reconciliation: Collaborate with the Accounts Payable department to ensure efficient invoice processing and timely supplier payments.

Requirements

• Bachelor's degree in Business, Hospitality, or related field.
• 5–10 years of experience in luxury hospitality, with at least 3 years in procurement/strategic F&B leadership.
• Proven negotiation and vendor management experience.
• Knowledge of F&B categories, budgeting, KPIs, and cost-control methods.
• Proficiency in Procurement ERP, POS, and Microsoft Office.
• Fluency in English (Greek and additional languages are a plus).
• Strong leadership and people-development abilities.
