About the Role
The Restaurant Manager is a leader within the Food & Beverage division, responsible for the overall success and prosperity of a signature restaurant. Acting as both brand ambassador and host, the Restaurant Manager ensures outstanding service, guest recognition, operational excellence, and revenue growth. This role requires close collaboration with Resort Owners, Chef Partners, Marketing, and Guest Relations to deliver exceptional experiences. A strong sense of ownership, accountability, and guest-centric leadership are essential.
Main Responsibilities
- Drive restaurant business by optimizing seating capacity (OpenTable or similar) and maximizing volume.
- Increase average check and food-to-beverage ratio to boost revenue per guest.
- Act as a local ambassador, building networks with concierges, luxury service providers, and the local community.
- Partner with PR/Marketing to promote the restaurant through influencers, media, events, and hotel guest programs.
- Collaborate with Catering to manage restaurant buyouts and private dining events.
- Entertain and host influencers, journalists, and high-value guests.
- Innovate offerings with new meal periods (e.g., brunch, themed events, pop-ups) relevant to local and international trends.
- Handle guest service enhancements, complaints, and online review management, ensuring issues are resolved to guest satisfaction.
- Manage the restaurant's P&L, budgets, and cost controls, driving financial performance.
- Lead, develop and train the management team (assistant managers, sommelier, host team) and ensure strong FOH–BOH collaboration.
- Maintain professional standards of service, guest recognition, and cultural excellence.
- Ensure adequate stock levels, equipment maintenance, and par levels.
- Stay updated on F&B market and international trends to create activations and experiences relevant to the Greek luxury resort scene.
- Bachelor's degree in Hospitality Management or related field.
- 3–5 years of experience as a Restaurant Manager or senior supervisor in a luxury resort or fine dining environment.
- Knowledge of restaurant operations, service standards, cost and labor control.
- Familiarity with POS (MICROS/Simphony), OpenTable or similar.
- Strong leadership, cross-cultural sensitivity, and guest service orientation.
- Excellent communication and problem-solving skills.
- Fluency in English and Greek required; additional languages are a plus.
