JOB RESPONSIBILITIES:

  • Provide hotel/restaurant-wide leadership and oversight of all Food & Beverage operations, including restaurants, bars, in-room dining, events, and seasonal outlets.
  • Coordinate and align all F&B departments and outlet leaders under a unified operational and commercial strategy.
  • Actively participate in the Company's growth initiatives, including new concepts, outlet development, operational restructuring, and capacity expansion.
  • Ensure consistent service standards, product quality, and guest experience across all F&B touchpoints.
  • Develop, implement, and enforce F&B operating standards, policies, and SOPs.
  • Lead, mentor, and evaluate the F&B management team, ensuring clarity of roles, accountability, and performance alignment.
  • Work in close collaboration with the Executive Chef to ensure menu execution, quality control, costing accuracy, and kitchen-service integration.
  • Prepare, manage, and monitor F&B budgets, forecasts, and financial performance, with strict control over food cost, beverage cost, labor cost, and operational efficiency.
  • Analyze performance data and KPIs, identifying risks, opportunities, and corrective actions.
  • Coordinate procurement planning with the Procurement and Finance teams, ensuring approved suppliers, cost discipline, and quality consistency.
  • Ensure compliance with health, safety, hygiene, licensing, and legal requirements across all F&B operations.
  • Support recruitment, onboarding, training, and development of F&B staff in collaboration with the HR department.
  • Oversee guest feedback management related to F&B and ensure timely resolution and continuous improvement.
  • Collaborate with Sales, Marketing, and Events teams on promotions, activations, group business, and special events.
  • Provide regular reporting and strategic input to the General Manager on F&B performance, risks, and growth opportunities.

JOB REQUIREMENTS:

  • Degree or diploma in Hospitality Management or a related field.
  • Minimum 5–7 years of senior Food & Beverage management experience in a luxury hotel or high-end hospitality environment.
  • Proven experience managing multi-outlet F&B operations.
  • Strong knowledge of cost control, labor planning, and operational KPIs.
  • Very good command of English; additional languages are considered an asset.
  • Strong leadership presence with the ability to coordinate and unify large, multi-disciplinary F&B teams.
  • Solid commercial and financial understanding of hotel-wide F&B operations.
  • Ability to manage change and growth in a structured and controlled manner.
  • High operational discipline and attention to detail.
  • Strong interpersonal and communication skills.
  • Ability to work under pressure in a seasonal luxury hospitality environment.
  • The role requires a willingness to share working time between our two primary locations: Santorini and Athens. The place of employment will be the premises of the Hotel in Santorini during the summer season and at RMKA's Athens offices (Glyfada) during the winter months.
