MAKRIS Athens by Domes

Domes Resorts lands in Athens, introducing our first degustation restaurant in Thissio. Our talented, Michelin Starred Chef Patron Petros Dimas, alongside with a team of culinary experts will create the ultimate fine dining experience based on Greek creative cuisine.

We are currently hiring for Athens, looking for a highly energetic and passionate R&D Head Chef with Michelin Background, joining our team at MAKRIS Athens by Domes.

R&D Head Chef with Michelin Background

The Role:

The Research and Development (R&D) Chef at MAKRIS by Domes, creates new recipes to improve food product . He/She designs new recipes in consideration of ideas and market demand and improves recipes and preparation methods. He/She also helps to design marketing strategies based on his/her approach and ideas in creating new dishes.

Some of the responsibilities:

Culinary Innovation and Recipe Development

• Creates and experiments with new recipes to align with the restaurant's vision and fine dining standards.
• Refine and perfect taste profiles through rigorous experimentation and sensory testing.
• Develop innovative ideas from food preparation processes to enhance menu offerings.

Research and Development

• Assist in data gathering and analysis for new menu item specifications.
• Establish product specifications and maintain detailed documentation for new dishes.
• Conduct sensory evaluations and lead panel testing sessions to ensure exceptional taste and quality.
• Review ingredients and preparation methods to meet customer expectations and premium standards.

Quality Assurance and Compliance

• Ensure all recipes and processes meet food safety regulations and fine dining quality standards.
• Review methods to continuously improve the quality and presentation of dishes.
• Troubleshoot preparation and production issues to maintain consistency and excellence.

Collaboration and Leadership

• Work closely with the Chef Patron and the team to align culinary creations with the brand's vision.
• Train and mentor kitchen staff in executing new recipes and maintaining quality control.
• Provide recommendations for equipment upgrades or process changes to enhance kitchen efficiency.

Requirements

Useful to have:

• Proven experience as a Head Chef or in a similar R&D culinary leadership role, preferably in fine dining.
• Strong background in recipe development, menu creation, and sensory evaluation.
• Exceptional creativity, attention to detail, and a passion for culinary excellence.
• In-depth knowledge of food safety standards and regulations.
