Καθήκοντα:
Διαχείριση και καθοδήγηση της ομάδας κουζίνας
Δημιουργία και ανανέωση μενού με έμφαση στη γεύση, την παρουσίαση και το κόστος
Έλεγχος ποιότητας πρώτων υλών και υγειονομικών κανόνων
Διαχείριση αποθεμάτων και παραγγελιών
Συνεργασία με τη διεύθυνση για κοστολόγηση και food cost
Διατήρηση υψηλών προτύπων καθαριότητας και ασφάλειας τροφίμων
Απαραίτητα προσόντα:
Προϋπηρεσία σε θέση Head Chef ή Sous Chef
Άριστη γνώση τεχνικών μαγειρικής και σύγχρονων τάσεων γαστρονομίας
Ικανότητα ηγεσίας και ομαδικής εργασίας
Οργανωτικές δεξιότητες και συνέπεια
Γνώση HACCP
