The beachfront resort comprises of 99 suites and villas, all with outdoor terraces and sea views, along with seven restaurants and bars.

About the job

Based at Mandarin Oriental, Costa Navarino within the Pastry Department in Pylos, Messenia, Greece, the Pastry Sous Chef ensures the smooth running of the operations and the good working environment between colleagues. The Pastry Sous Chef reports to the Executive Pastry Chef.

As Pastry Sous Chef, you will be responsible for the following duties:

  • Check the quality of pastries, ensure all live products received are in top condition and are of top quality, oversee stock rotation (F.I.F.O.) and carry out the pastry requisitioning and ordering.

  • Check standard recipes ensuring proper portion control and uniformity of taste and quality.

  • Oversee the overall food cost, as well as supplies, energy costs and utensils.

  • Propose, and initiate when approved, new services and products for our guests.

  • Motivate and lead by example. Ensure that all designated action points from daily briefings or other operational meetings are being followed by the individuals concerned.

  • Complete additional tasks as assigned by management.

As Pastry Sous Chef, we expect from you:

  • Valid EU Passport or Hellenic Residence Permit.

  • Globally recognized Culinary Qualification.

  • 2 years of experience in a similar role.

Fluency in English.
