Our retail bakery lab in Polígono, Athens, part of the
72H Artisanal Bakery

family, is looking for a dedicated
baker

to join our artisan team.

Here, you will have the opportunity to experiment with dough in multiple dimensions and explore textures, shapes and flavours under the guidance of our experienced bakers. This is a chance to refine your craft hands-on, learning the art of sourdough and long fermentation while contributing to the daily operations of a dynamic bakery


What you'll do:

– Support the daily production of artisan breads with natural fermentation

– Assist with mixing, shaping, proofing and baking with respect to fermentation and timing

– Assist in managing production and delivery checklists and basic administrative tasks

– Maintain a clean, organised and food-safe working environment

– Learn, contribute and grow alongside an experienced, passionate team of bakers


What you bring to the table:

– Experience in a bakery or kitchen (at least 1 year preferred)

– Hands-on knowledge or strong interest in sourdough and long fermentation

– Structured and detail-orientated way of working with care and precision in the process

– Willingness to learn and embrace new techniques and products

– Patience and composure. You respect the time it takes for real bread to develop
