Our client, a luxury hotel in Athens, is seeking a strategic and experienced Procurement Manager to lead all procurement & purchasing operations of the hotel. As a key member of the Finance leadership team, you will manage the procurement spend and oversee a team of four professionals, ensuring cost-effectiveness, quality, and operational excellence across all procurement categories.

Responsibilities

  • Lead and execute the overall procurement strategy for the hotel, with an 80% focus on
    Food & Beverage (F&B)
    sourcing and the remaining scope covering:

  • Housekeeping consumables

-Cleaning chemicals

-Operational equipment and supplies (OS&E)

  • Manage supplier relationships and negotiate high-value contracts to optimize pricing, service quality, and delivery timelines
  • Oversee procurement-related contracts for
    services and vendors
    , ensuring compliance and performance standards
  • Coordinate with receiving and storage teams to monitor and control the flow of goods into the hotel
  • Collaborate closely with the Executive Chef, F&B Director, and Housekeeping to understand operational needs and maintain inventory availability
  • Monitor procurement KPIs, manage budgets, and identify opportunities for cost optimization and process improvement
  • Ensure full ERP system utilization for procurement planning, ordering, and reporting

Qualifications

  • Bachelor's degree in Business Administration, Finance, Supply Chain, or a related field
  • Minimum 5 years of procurement experience in hospitality, ideally in a 5-star environment
  • Strong working knowledge of ERP systems (preferably SAP)
  • Proven experience in managing end-to-end procurement processes and vendor negotiations
  • Excellent command of the English language, both spoken and written
  • Strong communication and interpersonal skills
  • Analytical thinker with sound decision-making ability
  • Highly organized, with attention to detail and a proactive approach
