The Project
Eupatoria 5 is an upcoming bar/café de quartier located in a historic and iconic space in Paris, in the heart of Ménilmontant/Belleville — a neighborhood named one of the world's top five by The New York Times in 2024. The area is already home to restaurants setting new standards in French and international cuisine, including Le Baratin, Le Cheval d'Or, Cendrillon, and Soces.
We are taking over the former space of Eva Pristky — once a speakeasy, then a bookshop, later an art gallery — and transforming it into Eupatoria 5: a place that honors the site's rich cultural history of drinks, books, and art.
Our ambition is to revive this iconic spot as a vibrant venue, open from morning until late into the night, with a creative, relaxed, and unpretentious spirit — faithful to the soul of the 20th arrondissement.
The atmosphere should feel warm and genuine, without being overdesigned. A few key elements will give the space its character: a beautiful bar counter, elegant wine fridges, and carefully chosen lighting.
We aim to create a true neighborhood institution — a place for local residents, wine lovers, and curious Parisians to gather, share, and enjoy.
What We Offer Throughout the Day
Morning (from 9 a.m.): A Greek-inspired café serving breakfast, great coffee, and pastries — perfect for takeaway or reading on-site.
Lunchtime: A small, rotating menu of two generous daily specials (entrée + plat), rooted in Greek cuisine and seasonal produce.
Evening: A lively natural wine bar with shareable dishes, mezze, and a relaxed atmosphere. The kitchen should support a seamless shift from café to full evening service.
We're not aiming to replicate a traditional Greek taverna, but rather to present modern Greek cuisine as it is found in Athens today, interpreted in a Parisian context. You will find a mix of mezze, classics, and inventive plates.
How you bring Athens to Paris is up to you. We create the space — you bring it to life through your cooking.
Your Profile
We are looking for a talented and motivated chef who is passionate about Greek cuisine — someone who's excited to take ownership of a new culinary project and shape it from the ground up.
You are:
Culinarily confident, with experience in Greek or broader Mediterranean cuisine and the creative edge to reinterpret classics for a contemporary audience.
Organized and independent, able to build a kitchen team, structure service workflows, and maintain consistency at all times.
Inspired by the seasons, crafting menus based on what's fresh and available — with a focus on simplicity, quality, and flavor.
Comfortable in both solo and team settings, capable of training others and ensuring excellence even in your absence.
Adaptable and versatile, able to manage transitions between morning café service, lunch, and a lively evening bar.
Clear in communication, ideally speaking kitchen-level French or English (bilingualism is a plus).
Genuinely excited by the opportunity to contribute to a unique space that blends food, culture, and community.

Your Mission and Opportunity
You will have full creative freedom and operational responsibility for the kitchen. This includes:
Designing and writing the menu
Creating and documenting recipes
Organizing and structuring the kitchen
Ordering products and managing suppliers
Preparing and executing services
Training and supervising kitchen staff
Overseeing food quality across all dayparts, even when not physically present

Who We Are
You will work closely with Hakim Laincer, born and raised in Paris, who will be the Restaurant Manager. With experience as a barista and in both modern and classical French restaurants, Hakim is also the founder of a well-known natural wine bar in Bogotá. He brings energy, hospitality, and deep knowledge of the Paris food and wine scene.
Behind the project are Stéphane Brass and Benedikt Schilling, founders of Sürpriz, a Berlin-style kebab restaurant group with four popular locations in Paris — widely recognized as serving some of the best kebabs in France.
Our work with Sürpriz has earned praise in the French food press and on TV. We will use these networks and platforms to support Eupatoria 5, from launch to long-term visibility.
We are dedicated to using the knowledge and contacts we gained with Sürpriz to the success of Eupatoria 5. The infrastructure of Sürpriz consists of 4 fully equipped stores, a lab and an office experienced in running restaurants.
What We Offer
Salary: €2,400 - 3,000 € brut per month - depending on the missions
Housing: If needed an apartment can be available near the restaurant for a decent price
Term: One-year collaboration to start, with flexibility to extend depending on mutual fit
Visibility: Strong press coverage and positioning within Paris's culinary scene — a real opportunity to make your name in France and beyond
