Located in Florina, a crossroads of the agricultural sector, C.S.D. is supplied either from privately owned crops or from collaborating local producers, maximizing the quality of its products.

Our company is seeking a Distillery Manager
to lead daily distillation operations, ensure product quality and compliance, and drive continuous improvement across production, safety, and cost efficiency.

Key responsibilities

Own end-to-end production: mashing, fermentation, distillation, blending, proofing, barreling/aging, filtration, bottling/packaging.

●     
Plan and schedule production to meet volume, quality, and cost targets; manage capacity and changeovers.

●     
Collaborate with the rest of C.S.D. departments (operations, warehouse, accounting and marketing)

●     
Ensure quality control: sensory, in-process checks, lab testing, retain samples, root-cause investigations, corrective actions.

●     
Maintain regulatory compliance and record-keeping with environmental, health & safety rules.

●     
Oversee raw material and consumable management: fruits/yeast/water, barrels, closures, packaging; inventory accuracy and supplier coordination.

●     
Own equipment reliability: stills, boilers/steam, chillers, compressors, CIP/SIP, controls; coordinate PMs and repairs with maintenance/OEMs.

●     
Drive continuous improvement: yield optimization, loss reduction and energy/water efficiency. Research and develop new products and seasonal releases

●     
Manage production data, batch records, traceability, and ERP/MES entries.

●     
Uphold safety culture: risk assessments, SOPs, lock-out/tag-out, incident reporting, and annual drills/training.

●     
Support audits (regulatory, quality, customer) and respond with action plans.

Requirements

●     
Degree in Chemical/Mechanical/Food Science, Fermentation Science, or equivalent experience.

●     
2+ years in distillation/brewing/spirits or process manufacturing, including leadership of small/medium teams.

●     
Strong knowledge of mashing, fermentation kinetics, distillation principles (cuts, reflux, congeners), and sensory evaluation.

●     
Hands-on experience with stills (pot/column), boilers/steam systems, pumps, instrumentation (flow/temp/pressure), and sanitation (CIP).

●     
Working knowledge of quality systems (HACCP/GMP), documentation, and traceability.

●     
Familiarity with alcohol/beverage regulations and excise/tax reporting in.

●     
Data-driven mindset; proficient with spreadsheets and production/ERP tools.

●     
Proficient computer literacy with ability to utilize the Microsoft Office Suite, including Word, Excel and Outlook; keyboard/typing skills a must, advanced Excel preferred.

●     
Fluency in English, both written and spoken, is essential.
