As Head Sommelier, you will take the lead in developing and managing a distinguished wine program that aligns seamlessly with our culinary vision and enhances the overall guest experience. You will oversee wine service across all outlets, provide ongoing training to service staff, and ensure the highest standards of wine knowledge and presentation are consistently upheld. Your deep knowledge of wine selection, pairing, cellar management, and guest interaction will play a key role in driving excellence and delivering memorable dining moments.

Responsibilities

• Curate and maintain an extensive, well-balanced wine list showcasing both local and international selections that align with the restaurant's culinary identity.
• Provide expert wine recommendations to guests, ensuring thoughtful pairings that enhance their dining experience.
• Lead comprehensive training for service staff on wine service, pairing principles, and in-depth knowledge of the wine list to maintain high service standards.
• Organize and conduct engaging wine tastings and educational sessions for both staff and guests to foster a deeper appreciation for wine.
• Collaborate closely with the culinary team to develop bespoke wine pairing menus for special events, private dinners, and seasonal offerings.
• Oversee wine inventory, ordering, and storage, ensuring optimal stock levels, proper cellar conditions, and cost control.
• Remain up to date with global wine trends, maintaining strong relationships with distributors, producers, and industry professionals.
• Represent the venue at wine-related events and coordinate in-house wine promotions to elevate guest engagement and reinforce the property's wine-forward identity.
• Ensure every wine service moment—from selection to pouring—is elegant, informed, and seamless.
• Foster a wine culture within the F&B team that reflects Conrad's emphasis on storytelling, refinement, and guest-centricity.
• Support VIP dining experiences, private events, and tastings, working closely with the culinary and guest relations teams.

Requirements

• Minimum of 5 years' experience as a Sommelier in luxury hotels or fine dining establishments.
• Bachelor's degree in hospitality management, culinary arts, or related field preferred.
• A deep knowledge of global wine regions, varietals, and pairing principles.
• Strong communication skills with fluency in both Greek and English.
• Excellent interpersonal skills with a passion for providing remarkable guest experiences.
• Ability to train and inspire team members and foster a culture of continuous learning around wine.
• Proficient in wine management software and inventory tracking.
• Certified Sommelier (WSET Level 3, CMS Advanced, or equivalent).
